When we stumbled across red wine brownies, we thought, "THIS! Surely this is the greatest food mashup of all time." But then we heard about panwaffles. Concocted by Erin McDowell at Food52, the creation is part-waffle, part-pancake, and complete breakfast perfection.

Writes Erin of her invention: "I'm a big fan of The Tonight Show and was delighted by a diagram Jimmy Fallon drew a few weeks back describing his ideal 'meta breakfast' invention. It was a waffle surrounded by a pancake. Since then, I've made more than a few batches, and I can attest Mr. Fallon is on to something."

Erin makes the waffle-pancake magic happen by first whipping up a waffle in a waffle iron, then taking the not-quite-cooked product and putting it in a pan. She then adds more batter around the waffle to create the pancake around it.
